Meals That Heal – Cardamon Ginger Chai
Chai: The Aromatic Elixir of Wellness and Comfort
Spiced and scented, chai is one of those soul-warming wellness teas that stays with you. Enjoyed as spiced milk tea in India and Pakistan, chai gets its unique and soothing flavor from black tea leaves steeped with spices and blended with milk and a sweetener.
Cardamom, cinnamon, cloves, ginger, and even peppercorns, are commonly used, but others, such as allspice, cinnamon, fennel and nutmeg, add variety to chai-making. As you can see all these flavors are super soothing and blend together spiciness with sweetness.
It’s thanks to these delicious spices (and the black tea base) that add up to chai being a high-quality drink that brims with health benefits. Many of these spices are used in traditional Chinese medicine too.

Meals That Heal -Cardamon Ginger Chai
Ingredients
- 1 tablespoon ginger root, fresh, grated and peeled or 1 teaspoon ground ginger
- ½ teaspoon ground cardamon
- ⅛ teaspoon ground cloves
- ⅛ teaspoon black pepper
- 1 stick cinnamon
- 2½ cups water
- 1 tablespoon black tea leaves or 2 teabags
- 2½ cups milk or coconut milk
- 2 tablespoons honey
- 1 pinch saffron, for garnish (optional)
Instructions
- Combine the ginger root, cardamom, cloves and black pepper in a small bowl. Set aside.
- Fill a saucepan with water; bring to a full boil. Place the loose tea or tea bags and cinnamon stick in the water. Stir in the spice mixture. Reduce to simmer.
- Steep for about 5 minutes, or longer for a strong, rich tea flavor.
- Remove the tea and cinnamon stick.
- Add the milk. Continue to simmer until the chai is heated through, stirring gently.
- Use a strainer to pour the chai into your favorite mugs. Add honey to taste and sprinkle with a couple of threads of saffron if desired.
