Meals That Heal: Daikon and Chicory Salad

Did you know that raw daikon is chock full of digestive enzymes making it a great salad for those that normally cannot do raw veggies?
When we add the detoxifying qualities of chicory, we get a great salad that helps you burn fat easier.
The cooling yogurt and tahini dressing adds a wonderfully creamy bite that calms and cools the nervous system. What’s not to love about this summer salad?

Ingredients
  

  • 4 cups daikon (grated)
  • 2 cups chicory (chopped)
  • 1 zuchinni (grated)
  • Pinch black pepper (to taste)
  • 3 tbsp hazelnuts (chopped for garnish)
  • 2 tbsp mint (chopped for garnish)

Dressing

Instructions
 

  • Combine all the dressing ingredients in a bowl and whisk well.
  • Refrigerate until ready to use.
  • Arrange the vegetables on a serving plate and pour over the dressing. Season with pepper, then top with hazelnuts, cilantro, and mint, and serve.
