Place the walnuts in a food porcessor and pulse till they are coarsely grounded.
Add the dates and process until they are well combined.
Add the carob powder (if using), maple syrup, almond butter, vanilla and salt.
Process until the mixture is thick and smooth.
Add the almonds and pulse a few more times until it's well combined.
With your hands, form the mixture into 10 to 15 golf size balls. Roll the balls in coconut and place them in the fridge until they firm up, about 30 minutes.
